Ok... Seriously confused
I'm afraid I don't have "youthfully challenged" to fall back on... But I am a blond so we'll just blame this on the ultimate in dumb blond moments. :P
I've done quite a bit of snooping around trying too figure this out but I think I'm just confusing myself more not less and you started to explain it but got side tracked (not knocking you running a site isn't easy I understand that so don't take that wrong.) And you've been super helpful for me already.
Have I rambled enough? :P Anyway um... I can't seem to figure out how to change the color schemes for one of the themes, is that not possible?

Hi, Snix.
Any colors can be changed on any of the themes.
Colors can be changed in two places:
1) Edit Layout/Colors of your board, and
2) Custom CSS.
If you define a color (or any other attribute like borders, etc) for the same thing in both of these places, the CSS will override whatever you have in your layout/colors. So, if you're trying to change a color in your layout/colors and it isn't working, it will either need to be changed in the CSS, or removed from the CSS to let the layout/colors take over.

Hi Snix,
Changing the complete color scheme for a theme can be tedious since it really depends on changing the color for each part either individually or as a group.
In the Edit Layout/Colors part of the control panel you can only change the background of the board, add a banner, and or the colors of the forum, topic and posting areas.
Now if you go to the Custom CSS section then you have total control over every part that you can figure out how to target. Some of the areas are easy to find because they have "default" class or id settings while others have to be hunted down using various exploration tools.
As Lesigner Girl said CSS will always override a setting made in the Edit Layout/Colors menu so if you try and change a color there and it doesn't work then all that means is that there is a CSS setting that is getting in the way.
If you need help on something specific we can help you figure out which CSS bit is in the way and you can then choose if you want to change the CSS or the Edit Layout/Colors setting.
